New Healing Strategy: Food and Mindfulness for Longevity

As far back as the fifth century BC, Hippocrates, venerated as the father of medicine, proclaimed a mantra that would illuminate the path to health for millennia:
Let food be thy medicine and medicine be thy food.
This intrinsic relationship between food and well-being, intuited in antiquity, is today vigorously supported by scientific evidence. Embracing a holistic approach to food, seeing it not just as nourishment but as a source of healing, goes beyond the simple concept of diet. It is a philosophy that invites us to explore the power of food as a vehicle for deep healing; an anchor of longevity and prosperity.
But how can one concretely experience the healing power of food, which regenerates not only the body but also the soul and emotions?
One answer is found in fully immersing oneself in a journey of wellness and awareness. This approach is well known to me, as I am a dietician, nutritionist, and pharmacist and the science of wellness is my mission. I am also the creator of the Acquaviva Method, author of the book “The 5 Pillars of Health. Wellness and Longevity According to the Acquaviva Method,” and creator of the Health & Wellness Retreat series at Palazzo di Varignana. My latest innovation is the establishment of a revolutionary restaurant: the Ginkgo Longevity Restaurant at Palazzo di Varignana.
Here are my top 4 strategies for using food for healing.
Nourishing with a Powerful Menu
I have formulated a functional menu for the Ginko Longevity Restaurant with controlled glycemic impact. It aims to stimulate metabolic activity, counteract oxidative stress, and support the immune system. In my menu, strategic food combinations of nutraceutical compounds are key to enhancing physical and mental performance, promoting beauty and well-being.
It’s important to follow the seasonality of foods, eat them predominantly fresh, and use cooking techniques that preserve their nutritional properties.
Protecting the Gut
It’s no coincidence that the gongevity menu at Ginkgo was designed according to the Low FODMAP protocol to reduce symptoms associated with gastrointestinal disorders, such as irritable bowel syndrome (IBS).
FODMAP is an acronym for Fermentable Oligo- Di- Monosaccharides And Polyols, which are categories of short-chain carbohydrates that are osmotic (draw water into the intestine), not fully absorbed by the small intestine, and are fermented by bacteria in the large intestine, producing gas, resulting in a sensation of bloating and abdominal pain.
The low FODMAP diet is usually introduced under the supervision of a dietitian or nutritionist, who can help plan a balanced eating regimen and avoid nutritional deficiencies.
The longevity menu designed for Ginkgo is dedicated to retreat guests and features local farm products and edible flowers for their high functional component index. Additionally, the menu is anti-inflammatory, low-FODMAP, gluten-free, dairy-free, and free from refined carbohydrates. Innovative cooking techniques ensure the maximum bioavailability and nutritional potential of the foods. A common thread of the dishes is the extra virgin olive oil from our farm, a staple of the Mediterranean diet, which provides a unique taste along with numerous proven benefits.
Mindfulness at the Table: A New Approach to Food
Eating mindfully, at the right pace, listening to flavors, observing the colors of foods, and getting lost in the taste of what’s on the plate, is another strategy to heal the soul with food. It’s about experiencing food with all senses through the practice of mindfulness.
The Acquaviva Method includes an iconic experience of the Ginkgo, the Mindful Lunch. Usually, it is the first lunch of the retreat, guided by Dr. Acquaviva, who helps to understand how each dietary choice can be a step towards optimal well-being.

Designing Healing Spaces
The design of environments also impacts a person’s well-being. Attention to detail, the use of natural materials, and the use of colors and sounds that evoke nature are tactics that support relaxation and focus on the present. For the design of the Ginkgo at Palazzo di Varignana, for example, some principles of biophilia and wellness interior design were applied to create an immersive and healing experience.
When the wellness experience manages to engage guests and immerse them in a multi-sensory journey, then it is possible to experience various modes of healing, useful for finding one’s balance and benefiting both body and mind.
